The Muffin Thief

I was very industrious Sunday night. I made a double batch of maple bran muffins (very yummy). I sent half with Wade and kept the rest for me. I like to eat them as a snack so I took them all to work with me on Monday morning. As I was leaving Monday night, I decided to leave them at work. I rarely snack at home and would want them the next day at my desk. As luck would have it, I didn’t go into work on Tuesday. I came in this morning and the lid was off my muffin container. (I should tell you that the container was kind of hidden under my desk so someone went searching.) I don’t mind a bit that someone had a muffin, but the least they could do is put the lid back on!

In case you were curious, here is the recipe for the muffins:
1 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg, beaten
3/4 cup maple syrup
2 1/2 cup crushed bran flakes
8 oz. sour cream
Combine the first three ingredients in a bowl. In a larger bowl, combine the egg and syrup. Stir well. Add crushed bran flakes to the egg and syrup. Let the mixture stand for five minutes and then add the sour cream. Add the dry ingredients to the syrup mixture. Spoon into muffin pans (2/3 full). Bake at 400 degrees till brown. For small muffins, cook time is about 10 minutes. For larger muffins, cook time is about 20 minutes.
